  • 4 medium zucchinis, thinly sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh dill, chopped (optional)
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1/2 cup milk (or cream for a richer taste)
  • 1/4 cup olive oil
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

    Instructions
  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9x13-inch baking dish or a similar-sized casserole dish.
  2. Prepare the Zucchini Mix:
    • In a large bowl, combine the sliced zucchini, chopped onion, minced garlic, parsley, and dill (if using).
    • Add the crumbled feta and grated Parmesan cheese, and mix until evenly distributed.
  3. Make the Batter:
    • In a separate bowl, whisk together the eggs, milk, and olive oil.
    • Add the flour, baking powder, salt, pepper, and red pepper flakes (if using) to the egg mixture, stirring until well combined.
  4. Combine and Bake:
