They're a perfect way to sneak some veggies into your day while indulging in a delightful treat.
Ingredients:
- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley or dill)
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- Olive oil, for frying
Instructions:
1. Start by grating the zucchinis into a bowl and sprinkle them with salt. Let them sit for about 10 minutes, then squeeze out any excess moisture using a clean kitchen towel or paper towels.
2. In a separate bowl, beat the eggs and then add the grated zucchinis, flour, Parmesan cheese, chopped herbs, minced garlic, and black pepper. Mix everything together until well combined.
3. Heat a thin layer of olive oil in a large skillet over medium heat.
4. Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
5. Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
6. Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
