Ingredients:

  • 2 medium zucchinis, spiralized into noodles
  • 6 eggs
  • 1/4 cup milk or cream
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • Olive oil for cooking
Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Heat some olive oil in a large oven-safe skillet over medium heat.
  3. Add the zucchini noodles to the skillet and sauté for about 2-3 minutes until they start to soften.
  4. In a mixing bowl, whisk together the eggs, milk or cream, salt, and pepper.
  5. Pour the egg mixture over the zucchini noodles in the skillet.
  6. Sprinkle the crumbled goat cheese and chopped basil evenly over the eggs.
  7. Cook on the stovetop for 3-4 minutes until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set in the center and golden brown on top.
  9. Remove from the oven and let it cool slightly before slicing and serving.
