  • 2 medium zucchinis, peeled and grated

  • 1/4 cup sugar (or honey for a healthier option)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk (or almond milk)
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • 1/4 cup raisins or chopped nuts (optional)

Instructions​

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Lightly grease a baking dish or individual ramekins.
  2. Prepare the Zucchini:
    • Peel and grate the zucchinis, then place them in a clean kitchen towel and squeeze out as much moisture as possible.
  3. Make the Pudding Mixture:
    • In a large bowl, whisk together the sugar (or honey), cinnamon, nutmeg, and salt.
    • Add the eggs and beat well until the mixture is smooth.
    • Stir in the milk, vanilla extract, and melted butter.
    • Fold in the grated zucchini and, if using, the raisins or chopped nuts.
  4. Bake the Pudding:
    • Pour the mixture into the prepared baking dish or ramekins.
    • Bake for 35-40 minutes, or until the pudding is set and lightly golden on top.
    • Let cool slightly before serving.
