Hey everyone, I want to introduce you to a comforting Italian favorite: Zuppa Toscana! 🍲 This hearty soup is packed with flavor and sure to warm you up on chilly days. Let's dive into this delicious recipe!

Ingredients:
  • 4 slices bacon, chopped1 pound Italian sausage (spicy or mild, depending on your preference)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups water
  • 3 large potatoes, diced
  • 2 cups chopped kale
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)
  • Grated Parmesan cheese (for serving)
Instructions:
  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it apart into crumbles, until browned. Remove sausage from pot and set aside.
  2. In the same pot, add chopped bacon and cook until crispy. Remove bacon from pot and set aside, leaving the bacon drippings in the pot.
  3. Add diced onion to the pot and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. Pour in chicken broth and water, then add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in cooked sausage, chopped kale, and heavy cream. Let simmer for another 5 minutes.
  6. Season with salt, pepper, and red pepper flakes to taste.
  7. Serve hot, garnished with crispy bacon and grated Parmesan cheese.
