Ingredients:
- 4 slices bacon, chopped1 pound Italian sausage (spicy or mild, depending on your preference)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 3 large potatoes, diced
- 2 cups chopped kale
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional, for added heat)
- Grated Parmesan cheese (for serving)
- In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it apart into crumbles, until browned. Remove sausage from pot and set aside.
- In the same pot, add chopped bacon and cook until crispy. Remove bacon from pot and set aside, leaving the bacon drippings in the pot.
- Add diced onion to the pot and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- Pour in chicken broth and water, then add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in cooked sausage, chopped kale, and heavy cream. Let simmer for another 5 minutes.
- Season with salt, pepper, and red pepper flakes to taste.
- Serve hot, garnished with crispy bacon and grated Parmesan cheese.
