INGREDIENTS:

  • 350g thinly sliced beef (sirloin, top round, flank)
  • 1/2 red onion, sliced into rings
Marinade:

  • 1/4 cup soy sauce
  • 1-2 tbsp calamansi juice (adjust according to taste, can substitute with lime juice)
  • 3 garlic cloves, minced
  • 1 tsp sugar
  • 1/4 tsp ground black pepper
DIRECTIONS:

  1. In a bowl, mix together the thinly sliced beef, soy sauce, calamansi juice, minced garlic, sugar, and ground black pepper.
  2. Massage the marinade into the meat until evenly coated. *Cover and let marinate for at least 30-60 minutes.
  3. Heat oil in a pan over medium heat. Squeeze the marinated beef to remove excess marinade, then fry for 3-5 minutes until just cooked through (you may need to do this in batches to avoid overcrowding). Set aside.
  4. In the same pan, add the onion rings. Cook for 5-10 minutes until softened and translucent.
  5. Pour in the remaining marinade and simmer until desired consistency to create the sauce.
  6. Return the beef to the pan and toss to combine.
  7. Serve with rice and veggies. Enjoy!

In my experience, using a tender cut of beef like sirloin or flank steak works best for Bistek, as it cooks quickly and remains tender. 🥩
