  • 4 cups vegetable broth
  • 2 cups water
  • Salt and pepper to taste
  • Fresh lime juice (optional, for serving)
  • Chopped cilantro (optional, for serving)
  • Sour cream or Greek yogurt (optional, for serving)
Instructions:
  1. Prepare the Beans: Rinse the dried black beans thoroughly under cold water. Place them in a large bowl and cover with water. Let them soak overnight. Drain and rinse before using.
  2. Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, garlic, red bell pepper, and carrot. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Add Spices: Stir in ground cumin, smoked paprika, and dried oregano. Cook for another minute until fragrant.
  4. Cook Beans: Add soaked black beans, vegetable broth, and water to the pot. Bring to a boil over high heat, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if needed to keep the beans submerged.
  5. Blend or Mash (optional): For a smoother consistency, you can blend a portion of the soup using an immersion blender or transfer a portion to a blender and blend until smooth. Alternatively, use a potato masher to mash some of the beans directly in the pot for a chunkier texture.
  6. Season and Serve: Season the soup with salt and pepper to taste. Serve hot, garnished with a squeeze of fresh lime juice, chopped cilantro, and a dollop of sour cream or Greek yogurt if desired.

I think black bean soup is so comforting, especially with a touch of smoky paprika! 🍲😋 Though blending half of the beans can give it a creamy texture without adding cream. Have you tried any unique variations?
