Ingredients:
  • 3 cups cooked rice (preferably cold and day-old)
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup cooked chicken, shrimp, or tofu (optional)
  • 1 cup mixed vegetables (such as peas, carrots, and bell peppers)
  • 3 green onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Sesame oil for drizzling (optional)
  • Sriracha or chili garlic sauce for serving (optional)
Instructions:
  1. Heat your Blackstone griddle over medium-high heat and add 1 tablespoon of vegetable oil.
  2. Add the beaten eggs and scramble them until cooked through. Remove from the griddle and set aside.
  3. Add the remaining tablespoon of vegetable oil to the griddle. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the mixed vegetables to the griddle and stir-fry for 2-3 minutes until they start to soften.
  5. Add the cooked chicken, shrimp, or tofu (if using) to the griddle and stir-fry for another 2 minutes until heated through.
  6. Push the vegetables and protein to one side of the griddle and add the cold cooked rice to the other side. Break up any clumps of rice and let it cook for 2-3 minutes to slightly crisp up.
  7. Combine the rice with the vegetables and protein on the griddle. Stir in the soy sauce and oyster sauce (if using), mixing everything together evenly.
  8. Add the scrambled eggs back to the griddle and toss everything together until well combined and heated through.
  9. Season the fried rice with salt and pepper to taste. Drizzle with sesame oil for extra flavor if desired.
  10. Remove from the griddle and garnish with sliced green onions. Serve hot with sriracha or chili garlic sauce on the side if you like a bit of heat.
