  2. Cook the Cherries:
    • In a medium saucepan, combine the cherries, sugar, lemon juice, vanilla extract (if using), and water.
    • Cook over medium heat, stirring occasionally, until the sugar has dissolved and the cherries have softened, about 5-7 minutes.
  3. Thicken the Compote:
    • Optionally, if you prefer a thicker compote, you can mix 1 tablespoon of cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the cherry mixture and continue cooking for another 2-3 minutes until thickened.
  4. Cool and Serve:

    • Transfer the compote to a serving bowl or jar and refrigerate until chilled before serving.
