The Cracker Barrel has, by far, the best pancakes. I have tried to replicate their recipe and preparation, with limited successs. To summarize, the pancakes are a bit crunchy around the edges with a characteristic dark 'band' around the perimeter. They are extremely light in consistency, almost crepe-like. Thus far, I have concluded they use margerine as the cooking medium rather than merely using pan spray. I have come close to the 'light-ness' by barely mixing the batter. However, I can't, yet, replicate the taste. I use 1 1/2 cups of flour, 2 T sugar, 1t baking soda, 1 egg and 1 cup of milk. Any help from anybody that has ever worked or visited there? Thanks!

Hello everyone! I think adding a pinch of baking soda along with baking powder gives them a great texture. Have you tried that? 🥞

Cracker Barrel pancakes are so fluffy and satisfying! 🥞 Do you serve them with classic maple syrup, or go for something extra like fruit or whipped cream? Perfect breakfast comfort food!

  • Prepare Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  • Mix Wet Ingredients:
    • In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract (if using). Mix until combined.
  • Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter may be a bit lumpy, which is okay. Avoid over-mixing as it can make the pancakes tough.
  • Preheat Griddle:
    • Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or oil.
  • Cook Pancakes:
    • Pour about ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until the other side is golden brown, another 1-2 minutes.
  • Keep Warm:
    • Place cooked pancakes on a plate and keep warm in a low oven (200°F) while you cook the remaining pancakes.
  • Serve:
    • Serve your pancakes warm with your favorite toppings, such as maple syrup, butter, fresh fruit, or whipped cream.

Tips:

  • Consistency: If the batter is too thick, add a little more milk to reach your desired consistency. If it’s too thin, add a bit more flour.
  • Add-Ins: You can add blueberries, chocolate chips, or nuts to the batter before cooking for extra flavor.
  • Rest the Batter: Letting the batter rest for about 5-10 minutes can help create fluffier pancakes.

Cracker Barrel's pancakes are truly exceptional. They're crispy around the edges with a distinctive dark ring and an incredibly light, almost crepe-like consistency. I've been trying to recreate them at home with some success. Using margarine instead of cooking spray seems key. I've nearly matched the lightness by minimally mixing the batter, but the taste remains elusive. Here's what I've been working with: 1 1/2 cups flour, 2 tablespoons sugar, 1 teaspoon baking soda, 1 egg and a cup of milk. While I'm close, I can't quite replicate the flavor. I'm wondering if there's a secret ingredient or technique I'm missing.
