Ingredients:

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 2 1/4 teaspoons gelatin powder
  • 3 tablespoons cold water
Instructions:

  1. In a small bowl, sprinkle gelatin powder over cold water. Let it sit for about 5 minutes to bloom.
  2. In the meantime, pour heavy cream and milk into a saucepan. Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the cream mixture. Alternatively, you can add vanilla extract if using.
  3. Heat the cream mixture over medium heat until it starts to simmer, then remove from heat. Allow the mixture to steep for about 15-20 minutes to infuse the vanilla flavor.
  4. After steeping, remove the vanilla pod from the cream mixture and discard.
  5. Place the saucepan back on the stove over low heat. Add sugar to the cream mixture and stir until completely dissolved.
  6. Add the bloomed gelatin to the warm cream mixture and whisk until the gelatin is fully dissolved.
  7. Strain the mixture through a fine-mesh sieve to remove any lumps or vanilla bean remnants.
  8. Pour the mixture into individual serving glasses or ramekins, filling them about 3/4 full.
  9. Refrigerate the panna cotta for at least 4 hours, or until set.
  10. Once set, serve the panna cotta chilled, either plain or with your favorite fruit compote or sauce.
  11. Enjoy the creamy goodness of Vanilla Panna Cotta!
