- 4 Earl Grey tea bags
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 1/2 teaspoons gelatin powder
- 1/4 cup cold water

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1 sprig fresh lavender
- 1/4 teaspoon baking soda
- Make the Earl Grey Tea Panna Cotta: In a medium saucepan, combine the heavy cream, milk, and Earl Grey tea bags. Heat over medium heat until simmering, then remove from heat and let steep for 15 minutes. Discard the tea bags.
- In a small bowl, whisk together the granulated sugar, brown sugar, and gelatin powder. Stir the mixture into the warm cream mixture until the sugar and gelatin dissolve.
- Strain the mixture into a measuring cup to remove any tea leaves. Divide the panna cotta mixture evenly among 4 small ramekins or glasses.
- Refrigerate for at least 4 hours, or until set.
- In a saucepan, combine the granulated sugar, corn syrup, water, and lavender sprig. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
- Wash the lavender sprig and remove it from the syrup. Increase the heat to high and cook without stirring until the mixture turns a deep amber color, about 5-7 minutes. (Caution: Hot sugar can burn easily, so watch closely!)
- Remove the pan from the heat and carefully stir in the baking soda. The mixture will foam vigorously – this is normal.
- Immediately pour the hot honeycomb mixture onto a baking sheet lined with parchment paper. Let cool completely, for at least 1 hour.
