I made this easy veggie flatbread the other day, and it’s perfect for a quick lunch or snack! Loaded with fresh veggies and super tasty.

Easy Veggie Flatbread Recipe​

Ingredients:

  • 2 store-bought flatbreads or naan
  • 1/2 cup hummus (or your favorite spread)
  • 1 cup mixed vegetables (bell peppers, cucumbers, spinach, etc.)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled (optional)
  • Olive oil for drizzling
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish (optional)
Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet and spread hummus evenly over each.
  3. Top with mixed vegetables, cherry tomatoes, and feta cheese.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 8-10 minutes until the edges are crispy and the veggies are slightly tender.
  6. Garnish with fresh herbs if desired, slice, and enjoy!
So simple, fresh, and delicious! Perfect for using up leftover veggies, too.

Hello! I think a simple mix of roasted veggies like zucchini and bell peppers would be perfect on a flatbread! Maybe add a little feta for some extra flavor 🫑🧀.
