Hey everyone! I wanted to share a super easy and delicious breakfast burrito recipe that you can make ahead of time, freeze, and reheat whenever you need a quick breakfast. They’re perfect for busy mornings!

Ingredients:​

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup cooked breakfast sausage (or bacon, if you prefer)
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 cup diced bell peppers and onions (fresh or frozen)
  • Salt and pepper to taste
  • Optional: Salsa or hot sauce for serving

Instructions:​

  1. Prep the Filling:
    • In a large skillet, cook the diced bell peppers and onions over medium heat until they’re soft. If you're using fresh veggies, about 5-7 minutes should do.
    • Add the cooked sausage (or bacon) to the skillet to warm it up.
    • In a bowl, whisk the eggs with a pinch of salt and pepper, then pour them into the skillet with the veggies and sausage. Cook until the eggs are just set.
  2. Assemble the Burritos:
    • Lay out the tortillas on a clean surface. Divide the egg mixture evenly among the tortillas, placing it in the center of each one.
    • Sprinkle cheese on top of the filling.
    • Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, creating a burrito.
  3. Freeze the Burritos:
    • Wrap each burrito in plastic wrap or aluminum foil to keep them fresh.
    • Place them in a freezer-safe bag or container, and pop them in the freezer. They can last for about 2-3 months!
  4. Reheating:
    • When you’re ready to enjoy one, just remove it from the freezer. Unwrap it and microwave it on a plate for about 1-2 minutes, or until heated through. You can also reheat them in the oven at 350°F for about 15-20 minutes if you prefer a crispier tortilla.
