I made this Greek yogurt chicken salad for lunch, and it's such a healthier twist on the classic! Creamy, tangy, and super satisfying.

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
Instructions:

  1. In a large bowl, mix the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  2. Add the shredded chicken, celery, red onion, and parsley. Stir to combine.
  3. Serve chilled, either on its own, in a sandwich, or wrapped in lettuce leaves.
It’s light, creamy, and perfect for meal prep or a quick, healthy meal!
