Ingredients:​

  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened

For Garnish (Optional):​

  • Sugar-free chocolate shavings or chips
  • Whipped cream (unsweetened or sweetened with a keto-friendly sweetener)
  • Chopped peanuts

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a medium bowl, mix together the almond flour, erythritol (or monk fruit sweetener), melted butter, vanilla extract, and a pinch of salt until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust.
  3. Bake the Crust:
    • Bake in the preheated oven for 10-12 minutes, or until the crust is golden brown. Allow it to cool completely before adding the filling.
  4. Prepare the Filling:
    • In a large bowl, beat the softened cream cheese until smooth and creamy.
    • Add the peanut butter, erythritol (or monk fruit sweetener), and vanilla extract. Mix until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the peanut butter mixture until fully combined and smooth.
  5. Assemble the Pie:
    • Spoon the peanut butter filling into the cooled crust and smooth the top with a spatula.
  6. Chill:
    • Refrigerate the pie for at least 2 hours, or until set. For best results, chill overnight.
  7. Garnish and Serve:
    • Before serving, garnish with sugar-free chocolate shavings or chips, whipped cream, and chopped peanuts if desired.
