I whipped up these Loaded Pancake Tacos this morning, and they were a huge hit! Imagine fluffy pancakes, folded like tacos and stuffed with all your favorite breakfast toppings. They're sweet, savory, and totally satisfying. Here's how I made them:

- Bacon
- Scrambled eggs
- Shredded cheddar cheese
- Maple syrup
- Optional toppings: diced tomatoes, avocado, sour cream, green onions
- Cook bacon until crispy, then chop into small pieces.
- Scramble eggs in a pan until fluffy and cooked through.
- Prepare pancake batter according to the package instructions.
- Heat a non-stick skillet over medium heat and pour a small amount of batter to make small pancakes (about the size of a taco shell).
- Cook each pancake until bubbles form on the surface, then flip and cook for another minute.
