Ingredients:
  • For the Bhaji:
    • 2 tablespoons butter
    • 1 tablespoon oil
    • 1 cup finely chopped onion
    • 1 cup finely chopped bell pepper
    • 1 cup chopped tomatoes
    • 1 cup boiled and mashed potatoes
    • 1 cup boiled and chopped mixed vegetables (carrots, peas, beans)
    • 2 teaspoons ginger-garlic paste
    • 1 teaspoon red chili powder
    • 1 teaspoon turmeric powder
    • 1 tablespoon Pav Bhaji masala
    • 1 teaspoon cumin seeds
    • 1 teaspoon salt (or to taste)
    • 1 tablespoon lemon juice
    • 2 tablespoons chopped fresh coriander leaves
  • For Serving:
    • 8 pav buns (Indian bread rolls)
    • 2 tablespoons butter (for toasting pav)
    • Lemon wedges
    • Extra chopped coriander leaves
    • Sliced onions (optional)
Instructions:
  1. Heat butter and oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add finely chopped onions and cook until translucent.
  3. Stir in ginger-garlic paste and cook for a minute until fragrant.
  4. Add bell pepper and cook for 2-3 minutes until softened.
  5. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until tomatoes are mushy and the oil begins to separate.
  6. Mix in boiled potatoes and chopped mixed vegetables. Cook for 5-7 minutes, mashing the mixture with the back of the spoon.
  7. Stir in Pav Bhaji masala and cook for another 5 minutes, adjusting salt and spices as needed.
  8. Add lemon juice and chopped coriander leaves. Mix well and cook for a minute.
For the Pav:
  1. Heat a pan over medium heat. Add butter and place pav buns cut-side down to toast until golden brown.
To Serve:
  1. Serve the bhaji hot with toasted pav buns. Garnish with extra coriander leaves, lemon wedges, and sliced onions if desired.
