Ingredients:
- For the Bhaji:
- 2 tablespoons butter
- 1 tablespoon oil
- 1 cup finely chopped onion
- 1 cup finely chopped bell pepper
- 1 cup chopped tomatoes
- 1 cup boiled and mashed potatoes
- 1 cup boiled and chopped mixed vegetables (carrots, peas, beans)
- 2 teaspoons ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon Pav Bhaji masala
- 1 teaspoon cumin seeds
- 1 teaspoon salt (or to taste)
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh coriander leaves
- For Serving:
- 8 pav buns (Indian bread rolls)
- 2 tablespoons butter (for toasting pav)
- Lemon wedges
- Extra chopped coriander leaves
- Sliced onions (optional)
Instructions:
- Heat butter and oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
- Add finely chopped onions and cook until translucent.
- Stir in ginger-garlic paste and cook for a minute until fragrant.
- Add bell pepper and cook for 2-3 minutes until softened.
- Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until tomatoes are mushy and the oil begins to separate.
- Mix in boiled potatoes and chopped mixed vegetables. Cook for 5-7 minutes, mashing the mixture with the back of the spoon.
- Stir in Pav Bhaji masala and cook for another 5 minutes, adjusting salt and spices as needed.
- Add lemon juice and chopped coriander leaves. Mix well and cook for a minute.
For the Pav:
- Heat a pan over medium heat. Add butter and place pav buns cut-side down to toast until golden brown.
To Serve:
- Serve the bhaji hot with toasted pav buns. Garnish with extra coriander leaves, lemon wedges, and sliced onions if desired.
