Try this yummy mousse!
Ingredients:
- 1 cup heavy cream
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar (or to taste)
- 1 teaspoon vanilla extract
- A pinch of salt (optional, to taste)
Instructions:
- Chill Equipment:
- For the best results, chill your mixing bowl and beaters (or the whisk attachment of your stand mixer) in the refrigerator for about 15-30 minutes before starting. This helps the cream whip better.
- Whip the Cream:
- In the chilled bowl, pour in the heavy cream. Using an electric mixer or stand mixer, beat the cream on medium-high speed until soft peaks form. Be careful not to overwhip, as you don’t want the cream to turn into butter.
- Prepare Peanut Butter Mixture:
- In a separate bowl, mix the creamy peanut butter with the powdered sugar and vanilla extract. If the peanut butter is too thick, you can warm it slightly in the microwave (10-15 seconds) to make it easier to mix.
- Combine Ingredients:
- Gently fold the peanut butter mixture into the whipped cream using a spatula. Fold until well combined and smooth. Be careful not to deflate the whipped cream too much.
- Season and Adjust:
- Taste the mousse and adjust the sweetness or add a pinch of salt if desired. Fold in any additional ingredients if you like, such as chopped peanuts for added texture.
- Chill:
- Spoon the mousse into serving dishes or glasses. Refrigerate for at least 1-2 hours to allow the mousse to set and firm up.
- Serve:
- Garnish with additional peanut butter swirls, chocolate shavings, or chopped peanuts if desired. Serve chilled and enjoy!
Tips:
- Peanut Butter: Use creamy peanut butter for the smoothest texture. If you prefer a bit of crunch, you can use crunchy peanut butter or add chopped peanuts.
- Sweetener: Adjust the amount of powdered sugar to your taste. You can also use alternative sweeteners like powdered erythritol if you're following a low-carb or keto diet.
- Garnishes: For extra flair, top with a drizzle of melted chocolate, a dollop of whipped cream, or a few mini peanut butter cups.
