Ingredients:​

  • 1 pound (about 450g) large shrimp, peeled and deveined
  • 4 cups water or seafood stock
  • 1 lemon, sliced
  • 2 cloves garlic, smashed
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: herbs such as parsley, thyme, or dill

Instructions:​

  1. Prepare the poaching liquid: In a large pot, combine the water or seafood stock with lemon slices, smashed garlic cloves, bay leaf, and any herbs you're using. Season the liquid with salt and pepper to taste.
  2. Bring the liquid to a simmer: Place the pot over medium heat and bring the poaching liquid to a gentle simmer. Let it simmer for about 5-10 minutes to allow the flavors to meld.
  3. Add the shrimp: Once the poaching liquid is simmering, carefully add the peeled and deveined shrimp to the pot. Make sure the shrimp are submerged in the liquid.
  4. Poach the shrimp: Let the shrimp cook in the poaching liquid for about 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook them, as shrimp can become rubbery if cooked too long.
  5. Remove the shrimp: Once the shrimp are cooked through, use a slotted spoon to remove them from the poaching liquid and transfer them to a plate or bowl.
  6. Serve and enjoy: Serve the poached shrimp warm or chilled, depending on your preference. They're delicious on their own as a light appetizer, or you can use them in salads, pasta dishes, or shrimp cocktails.
Feel free to adjust the seasonings and aromatics in the poaching liquid to suit your taste preferences. Poached shrimp are versatile and can be enjoyed in many different ways!
