It's a shrimp day today!
Ingredients:
- 1 pound (about 450g) large shrimp, peeled and deveined
- 1 cup Prosecco or any sparkling white wine
- 1/2 cup unsalted butter
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- Salt and pepper to taste
- Optional: chopped fresh herbs such as parsley or chives for garnish
Instructions:
- Prepare the shrimp: Pat the peeled and deveined shrimp dry with paper towels and season them lightly with salt and pepper.
- Poach the shrimp: In a large skillet or saucepan, heat the Prosecco over medium heat until it starts to simmer. Reduce the heat to low and add the shrimp to the skillet in a single layer. Poach the shrimp gently for about 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook them.
- Make the Prosecco butter sauce: While the shrimp are poaching, melt the unsalted butter in a separate skillet over medium heat. Add the minced garlic and chopped shallot to the skillet and cook until they become fragrant and softened, about 2-3 minutes.
- Combine the shrimp and sauce: Once the shrimp are cooked, use a slotted spoon to transfer them from the poaching liquid to the skillet with the melted butter, garlic, and shallot. Toss the shrimp gently in the butter sauce until they are well coated.
- Serve and garnish: Transfer the Prosecco butter-poached shrimp to a serving dish. Garnish with chopped fresh herbs such as parsley or chives, if desired.
- Enjoy: Serve the shrimp immediately while they're still warm. They make a delicious appetizer or main course, especially when served with crusty bread or over pasta.
