Ingredients:

  • 1 cup Medjool dates (pitted)
  • 1/2 cup raw almonds or walnuts
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1-2 tbsp water (if needed)
  • Pinch of sea salt
  • Shredded coconut or cacao nibs for rolling (optional)
Instructions:

  1. Blend the Ingredients: In a food processor, blend the almonds (or walnuts) until they form a crumbly texture. Add the pitted dates, cocoa powder, vanilla extract, and sea salt. Blend until everything is well combined and sticky.
  2. Add Water if Needed: If the mixture is too dry, add 1-2 tablespoons of water until it holds together when pressed.
  3. Form the Bites: Roll the mixture into small bite-sized balls. You can roll them in shredded coconut or cacao nibs for extra texture.
  4. Chill: Place the bites in the fridge for about 20-30 minutes to firm up.
  5. Enjoy: Store in the fridge for up to a week or freeze for longer!
