- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1 lemon, cut into wedges
- Prepare the Chicken: Preheat your oven to 375°F (190°C). Rinse the chicken inside and out under cold water, then pat it dry thoroughly with paper towels.
- Seasoning Blend: In a small bowl, combine olive oil, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well to form a paste.
- Season the Chicken: Rub the seasoning paste all over the chicken, making sure to coat both the outside and inside cavity evenly. If using, place lemon wedges inside the cavity for added flavor.
- Truss (Optional): Truss the chicken by tying the legs together with kitchen twine and tucking the wing tips under the body. This helps the chicken cook evenly and keeps its shape.
- Roast the Chicken: Place the seasoned chicken on a roasting rack or directly in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh without touching bone.
