Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons vegetable oil (or any high-heat oil like canola or peanut oil)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas or snow peas
- 1 cup broccoli florets
- 1 carrot, sliced thinly
- 3 green onions, sliced
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons hoisin sauce
- 1 tablespoon oyster sauce (optional, for extra depth of flavor)
- 1 tablespoon cornstarch (optional, for thickening sauce)
- 2 tablespoons water (if using cornstarch)
- 1 teaspoon sesame oil (for finishing)
- Cooked rice or noodles (for serving)
- Sesame seeds (optional, for garnish)
- Red pepper flakes (optional, for a bit of heat)
Instructions:
- Prepare the Sauce:
- In a small bowl, mix the soy sauce, hoisin sauce, and oyster sauce. If you want a thicker sauce, dissolve the cornstarch in the water and add it to the bowl. Set aside.
- Cook the Shrimp:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Stir-Fry the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of oil.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds, until fragrant.
- Add the sliced bell peppers, snap peas, broccoli florets, and carrots. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.
- Combine Everything:
- Return the shrimp to the skillet with the vegetables.
- Pour the prepared sauce over the shrimp and vegetables. Stir to coat everything evenly.
- If using cornstarch, the sauce should thicken in about a minute. Continue to cook for an additional 1-2 minutes, allowing the sauce to heat through and coat the shrimp and vegetables.
- Finish and Serve:
- Drizzle with sesame oil and give it one final stir.
- Serve the shrimp stir-fry over cooked rice or noodles.
- Garnish with sliced green onions, sesame seeds, and red pepper flakes if desired.
