- Heat about 1/4 cup of olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, and cook, stirring occasionally, until the potatoes are tender and lightly golden, about 10-15 minutes. Remove from heat and drain any excess oil.
- In a large mixing bowl, beat the eggs together with salt and pepper to taste.
- Add the cooked potatoes and onions to the egg mixture, stirring gently to combine.
- Heat a tablespoon of olive oil in a non-stick skillet over medium heat. Pour the egg and potato mixture into the skillet, spreading it out evenly with a spatula.
- Cook the tortilla for about 5-7 minutes, or until the bottom is golden brown and the top is set but still slightly runny.
- Carefully flip the tortilla using a large plate or lid to cover the skillet. Slide the tortilla back into the skillet to cook the other side for another 5-7 minutes, or until golden brown and cooked through.
