Ingredients:

For the Cake Layers:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
For the Coffee Soak:

  • 1 cup strong brewed coffee or espresso, cooled
  • 1/4 cup coffee liqueur (optional, but adds a nice depth of flavor)
For the Mascarpone Filling:

  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
For Decoration:

  • 2 tablespoons unsweetened cocoa powder
  • Chocolate shavings or cocoa nibs (optional)

Instructions:

  1. Bake the Cake Layers:
    • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, beat the egg yolks with 1/2 cup of sugar until thick and pale. Add the milk, melted butter, and vanilla extract, and mix well.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar and continue to beat until stiff peaks form.
    • Gently fold the egg whites into the batter until no streaks remain.
    • Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans on a wire rack.
  2. Prepare the Coffee Soak:
    • In a small bowl, combine the cooled coffee or espresso with the coffee liqueur (if using).
  3. Make the Mascarpone Filling:
    • In a large bowl, beat the heavy cream until stiff peaks form. Set aside.
    • In another bowl, beat the mascarpone cheese with the powdered sugar and vanilla extract until smooth.
    • Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Using a pastry brush, generously brush the coffee mixture over the top of the cake layer.
    • Spread half of the mascarpone filling over the soaked cake layer.
    • Place the second cake layer on top and brush with the remaining coffee mixture.
    • Spread the remaining mascarpone filling over the top and sides of the cake.
    • Dust the top of the cake with unsweetened cocoa powder.
    • Garnish with chocolate shavings or cocoa nibs if desired.
  5. Chill and Serve:
    • Refrigerate the tiramisu cake for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.
    • Slice and serve chilled.

Special Touches for Father's Day:

  • Personalized Decoration: Use chocolate letters or write "Happy Father's Day" on the top of the cake.
  • Fruit Garnish: Add some fresh berries around the base or on top for a pop of color and added flavor.
  • Elegant Presentation: Serve each slice with a dollop of whipped cream and a dusting of cocoa powder on the side.

I made this tiramisu cake last Father's Day and it was a hit! 😋 My advice is to follow the recipe closely, especially the coffee soak—it really amps up the flavor. Plus, using mascarpone cheese in the filling makes it super creamy. Give it a try and enjoy—it's worth the effort! 🍰
