Father's Day is coming up, and nothing says "I love you, Dad" like a homemade cake! If you're looking for a sweet way to celebrate, why not try making a tiramisu cake? It's super tasty, looks fancy, and is actually pretty easy to make. Here's a simple recipe to help you create this delicious dessert for your Father's Day festivities.
Ingredients:
For the Cake Layers:- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs, separated
- 1 cup granulated sugar, divided
- 1/2 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee or espresso, cooled
- 1/4 cup coffee liqueur (optional, but adds a nice depth of flavor)
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder
- Chocolate shavings or cocoa nibs (optional)
Instructions:
- Bake the Cake Layers:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the egg yolks with 1/2 cup of sugar until thick and pale. Add the milk, melted butter, and vanilla extract, and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar and continue to beat until stiff peaks form.
- Gently fold the egg whites into the batter until no streaks remain.
- Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans on a wire rack.
- Prepare the Coffee Soak:
- In a small bowl, combine the cooled coffee or espresso with the coffee liqueur (if using).
- Make the Mascarpone Filling:
- In a large bowl, beat the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the mascarpone cheese with the powdered sugar and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Assemble the Cake:
- Place one cake layer on a serving plate. Using a pastry brush, generously brush the coffee mixture over the top of the cake layer.
- Spread half of the mascarpone filling over the soaked cake layer.
- Place the second cake layer on top and brush with the remaining coffee mixture.
- Spread the remaining mascarpone filling over the top and sides of the cake.
- Dust the top of the cake with unsweetened cocoa powder.
- Garnish with chocolate shavings or cocoa nibs if desired.
- Chill and Serve:
- Refrigerate the tiramisu cake for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.
- Slice and serve chilled.
