For the Cake:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
For the Filling:
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coffee liqueur (optional)
  • 1/2 cup granulated sugar
For the Mascarpone Cream:
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
For Garnish:

  • Cocoa powder
  • Shaved chocolate or chocolate curls (optional)
Instructions:
  1. Preheat Oven:
    • Preheat your oven to 350Ā°F (175Ā°C). Grease and flour an 8-inch round cake pan.
  2. Make the Cake:
    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, cream the butter and granulated sugar until light and fluffy.
    • Beat in the eggs, one at a time, then add the milk and vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely.
  3. Prepare the Coffee Mixture:
    • In a small bowl, combine the brewed coffee, coffee liqueur (if using), and granulated sugar. Stir until the sugar is dissolved.
  4. Make the Mascarpone Cream:
    • In a large bowl, whip the heavy cream until stiff peaks form.
    • In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
    • Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Assemble the Cake:
    • Once the cake is cool, slice it into two layers.
    • Place one layer of cake on a serving plate and brush with half of the coffee mixture.
    • Spread a layer of mascarpone cream over the cake.
    • Top with the second layer of cake and brush with the remaining coffee mixture.
    • Spread the remaining mascarpone cream on top and sides of the cake.
  6. Garnish and Chill:
    • Dust the top of the cake with cocoa powder and garnish with shaved chocolate or chocolate curls if desired.
    • Refrigerate the cake for at least 4 hours or overnight to allow the flavors to meld.
