Ingredients:
- 8 oz (about 225g) pasta of your choice (elbow macaroni works well)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup frozen peas, thawed
- 1 cup vegetable broth
- 1 cup unsweetened almond milk (or any other plant-based milk)
- 3 tablespoons nutritional yeast
- 1 tablespoon soy sauce or tamari
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup breadcrumbs
- Chopped fresh parsley, for garnish (optional)
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or oil.
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes.
- In a small bowl, whisk together the vegetable broth, almond milk, nutritional yeast, soy sauce, lemon juice, Dijon mustard, dried thyme, salt, and pepper.
- Add the cooked pasta, thawed peas, chickpeas, and the sauce mixture to the skillet with the onions, garlic, and mushrooms. Stir until everything is well combined.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Sprinkle the breadcrumbs over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs are golden brown and the casserole is heated through.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley, if desired.
