Vegan Tuna Noodle Casserole

Ingredients:
  • 8 oz (about 225g) pasta of your choice (elbow macaroni works well)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas, thawed
  • 1 cup vegetable broth
  • 1 cup unsweetened almond milk (or any other plant-based milk)
  • 3 tablespoons nutritional yeast
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup breadcrumbs
  • Chopped fresh parsley, for garnish (optional)
Instructions:
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or oil.
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes.
  5. In a small bowl, whisk together the vegetable broth, almond milk, nutritional yeast, soy sauce, lemon juice, Dijon mustard, dried thyme, salt, and pepper.
  6. Add the cooked pasta, thawed peas, chickpeas, and the sauce mixture to the skillet with the onions, garlic, and mushrooms. Stir until everything is well combined.
  7. Transfer the mixture to the prepared baking dish and spread it out evenly.
  8. Sprinkle the breadcrumbs over the top of the casserole.
  9. Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs are golden brown and the casserole is heated through.
  10. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley, if desired.
