Ingredients:
- 2 cups grated zucchini
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, eggs, flour, Parmesan cheese, salt, and pepper. Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Spoon the zucchini batter onto the skillet to form pancakes, using about 1/4 cup of batter for each pancake. Flatten slightly with the back of a spoon.
- Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and serve warm.
