  • 2 cups grated zucchini
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

  1. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, eggs, flour, Parmesan cheese, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Spoon the zucchini batter onto the skillet to form pancakes, using about 1/4 cup of batter for each pancake. Flatten slightly with the back of a spoon.
  5. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through.
  6. Remove from the skillet and serve warm.
