Ingredients:
- 8 oz. chow mein noodles (or substitute with lo mein noodles)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 cup shredded carrots
- 1 cup thinly sliced bell peppers (any color)
- 1 cup snap peas
- 1 cup bean sprouts
- 1/2 cup mushrooms, sliced (optional)
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 2 green onions, chopped
- Sesame seeds (for garnish, optional)
Instructions:
- Cook the Noodles:
- Bring a large pot of water to a boil. Add the chow mein noodles and cook according to the package instructions (usually 3-4 minutes). Drain and rinse under cold water to prevent sticking.
- Prepare the Sauce:
- In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, and sesame oil. Set aside.
- Stir-Fry the Vegetables:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sliced onion. Stir-fry for about 1 minute until fragrant.
- Add the carrots, bell peppers, snap peas, and mushrooms (if using). Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Combine Noodles and Sauce:
- Add the cooked noodles to the skillet. Pour the sauce over the noodles and vegetables. Toss everything together to coat evenly and heat through.
- Add Bean Sprouts and Green Onions:
- Gently fold in the bean sprouts and chopped green onions. Cook for an additional 1-2 minutes.
- Serve:
- Transfer the chow mein to serving dishes and garnish with sesame seeds if desired. Serve immediately.
