2 medium-to-large ripe bananas
4 large eggs
½ cup whole wheat flour or buckwheat flour or ⅔ cup oat flour

INSTRUCTIONS
In a medium-sized mixing bowl, use a large fork to thoroughly mash the banana until it becomes shiny and mostly smooth. Incorporate the eggs into the banana by whisking until they are evenly mixed.
Combine the flour and any optional additives, stirring gently until fully blended. Allow the mixture to rest while you preheat the skillet (it can rest for up to 1 hour if necessary).
Warm a large skillet (whether stainless steel, cast iron, or non-stick) over medium-low heat (for an electric griddle, set it to 350 degrees Fahrenheit).Once the surface is hot enough that a drop of water sizzles upon contact, you're ready to start cooking the pancakes. If needed, lightly grease the skillet with butter or oil, wiping away excess with a paper towel (nonstick surfaces may not require oil).
Pour ¼ cup of batter onto the hot skillet, leaving some space around each pancake for expansion. Cook until small bubbles form on the pancake surface, approximately 2 to 3 minutes.
Flip the pancakes and continue cooking until they are lightly golden on both sides, approximately 1 to 2 minutes more. Repeat this process with the remaining batter, adjusting the heat and adding more butter if the pancakes are browning too quickly on the outside before cooking through on the inside.
Serve immediately or keep warm in an oven set to 200 degrees Fahrenheit. Any leftover pancakes can be stored in the refrigerator for up to 3 days, or frozen for up to 3 months. To reheat, stack the pancakes and wrap them in a paper towel before gently reheating them in the microwave.
