Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • Optional: coarse sugar for sprinkling on top

Instructions:
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.
  3. Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gently fold in the blueberries, being careful not to overmix the dough.
  7. Transfer the dough onto a lightly floured surface and shape it into a circle about 1 inch (2.5 cm) thick.
  8. Use a sharp knife or bench scraper to cut the circle into 8 equal wedges.
  9. Place the scones onto the prepared baking sheet, leaving some space between each one.
  10. Optional: Brush the tops of the scones with a little extra heavy cream and sprinkle with coarse sugar for a crunchy finish.
  11. Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and cooked through.
  12. Allow the scones to cool slightly before serving.
