Hey everyone! I wanted to share one of my favorite breakfast recipes featuring corn - corn fritters! They're crispy on the outside, soft on the inside, and packed with sweet corn flavor. Here's what you'll need:

- 1 cup fresh or canned corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup milk
- 1 egg
- 2 green onions, thinly sliced
- 1/4 cup grated cheddar cheese
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Vegetable oil for frying
- In a mixing bowl, combine the flour, cornmeal, baking powder, salt, and pepper.
- In another bowl, whisk together the egg and milk until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.
- Fold in the corn kernels, sliced green onions, and grated cheddar cheese until evenly distributed.
- Heat vegetable oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon.
- Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels.
- Serve hot with your favorite dipping sauce or enjoy them as they are!
