Ingredients:


  • 2 cups all-purpose flour (measured with a spoon, not sifted)
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 2 cups low-fat buttermilk (1% or less)
  • Butter for cooking
Instructions:

  1. In a medium bowl, whisk together buttermilk and eggs. Stir in flour, baking soda, salt, and sugar until just combined.
  2. Preheat a griddle, cast iron skillet, or non-stick skillet over medium-high heat. Grease with butter.
  3. Pour approximately 1/2 cup of batter onto the hot griddle for each pancake, spreading it out into a circle.
  4. Cook for 2-3 minutes until small bubbles start to appear on the surface of the pancake. Flip and cook for another 2 minutes or until golden brown.
  5. Transfer the cooked pancake to a plate and repeat with the remaining batter. Make sure to grease the griddle with butter before cooking each pancake.
  6. Serve warm, topped with your favorite pancake toppings.
Recipe Notes:

Leftover pancakes store well. Refrigerate in an airtight container for up to 5-7 days or freeze in a freezer-safe bag for up to 3 months.
