  • 2 lbs pork shoulder, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb roasted green chilies, chopped
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
Instructions:
  1. Brown the Pork:
    • Heat the vegetable oil in a large pot over medium-high heat.
    • Add the cubed pork shoulder and cook until browned on all sides. Remove and set aside.
  2. Sauté Vegetables:
    • In the same pot, add the chopped onion and cook until translucent.
    • Add the minced garlic and cook for another minute.
  3. Combine Ingredients:
    • Return the browned pork to the pot.
    • Add the roasted green chilies, chicken broth, diced tomatoes, ground cumin, oregano, salt, and pepper.
    • Stir well to combine.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and let it simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
  5. Serve:
    • Serve hot, garnished with fresh cilantro and lime wedges if desired.

Hello all! For a richer taste, I think using some smoked paprika can really enhance the flavor. Though, if you’re looking for something milder, you might skip it. 🧄🌿
