  • 1 cup snap peas
  • 1 cup bean sprouts
  • 1/2 cup mushrooms, sliced (optional)
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 2 green onions, chopped
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Cook the Noodles:
    • Bring a large pot of water to a boil. Add the chow mein noodles and cook according to the package instructions (usually 3-4 minutes). Drain and rinse under cold water to prevent sticking.
  2. Prepare the Sauce:
    • In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, and sesame oil. Set aside.
  3. Stir-Fry the Vegetables:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat.
    • Add the minced garlic and sliced onion. Stir-fry for about 1 minute until fragrant.
    • Add the carrots, bell peppers, snap peas, and mushrooms (if using). Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Combine Noodles and Sauce:
    • Add the cooked noodles to the skillet. Pour the sauce over the noodles and vegetables. Toss everything together to coat evenly and heat through.
  5. Add Bean Sprouts and Green Onions:
    • Gently fold in the bean sprouts and chopped green onions. Cook for an additional 1-2 minutes.
  6. Serve:
    • Transfer the chow mein to serving dishes and garnish with sesame seeds if desired. Serve immediately.
