I often take care of my niece and nephew, so I want to make them a fun and unique breakfast dish. Recently, I saw this recipe for making Rainbow Pancakes and they loved it! I thought I share the recipe here:

- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar

- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Natural food coloring (red, yellow, green, blue, and purple) or fruit purees (like blueberry, strawberry, spinach juice, etc.)

- Fresh fruits (bananas, berries, or kiwi)

- Make the Pancake Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if the batter is a little lumpy.
- Divide the Batter:
- Divide the pancake batter into separate bowls (around 5 bowls, one for each color of the rainbow).
